In cooking Kale has a variety of uses due to it’s health benefits.
In the Netherlands a mix of curly kale and mashed potatoes, sometimes with fried bacon, and served with smoked sausage. Kale is considered a Northern German staple and comfort food.
Often added into soups, stews, salads, pureed with tomatoes, in vegan broths and smoothies.
A personal favorite is to place on an oven tray, drizzle with olive oil, sprinkled with salt and black pepper, then to quickly bake in hot oven to make kale chips.
