Prime rib is a flavourful and tender part of the the rib portion. Although one of the more expensive cuts of beef, the name “Prime” refers to the fact that it is a prime beef cut.
It is best to prep your cut of Prime rib before cooking, whether cooking in the oven or on a grill. Best is to allow the meat to “air-dry” on a wooden cutting board. Sprinkle both sides with a kosher or coarse salt and allow the about 30 minutes for this to penetrate the muscle fiber and in so doing loosen it adding flavor to the juices. It is best not to add any other condiments at this stage as these will tend to burn during cooking. Rather add these at the end, prior to removing from the pan or grill.
