Sweet and crunchy, green beans are used in a variety of ways to add texture, flavour and colour to many dishes. Often eaten raw on their own or in salads, they are also pickled, stir-fried, used in stews or steamed.
It is best, when cooking them to blanch them in boiling water and then place directly into ice water. This process brings out their colour and keeps them crunching. They are then reheated just be serving.
