The fruit is distinctly and subtly flavoured with a smooth texture. The flesh is prone to quickly turning brown after exposure to air. To prevent this, lime or lemon juice can be added to avocados after peeling or cutting.
It is common in vegetarian dishes as a meat substitute due to it’s high fat content. Generally served raw in both savory and sweet dishes, salads, pizza, wraps, dips and spreads. Guacamole is one of the firm favorites in Mexican dishes. In some countries it is used in dessert drinks and ice-cream.
Can be cooked for a short time without becoming bitter.
