Mange tout, also known as snap pea or snow pea are eaten whole while the peas within are still very small – hence the French name, which means ‘eat everything’.
Leave whole or slice, according to your recipe. Cook in a steamer for 5-10 minutes or stir-fry until they are tender but still have some ‘bite’. They can also be boiled in salted water for 2 minutes
Mange tout is a good source of B1 (thiamin) and folic acid. And because you eat the whole pod, they are a greater source of the antioxidant vitamins A and C than ordinary peas. They are also an excellent source of dietary fibre.
