Despite their small size, Micro Greens pack a nutritional punch with more intense flavour than their mature counterparts. This makes them a good addition to any diet. They have an aromatic flavour (which will vary depending on the variety), and concentrated nutrient content and come in a variety of colors and textures.
The mild, earthy flavour and unique color of the Red amaranth lends itself to great visual garnishing and addition of colour to salads and many dishes.
High in nutrients, the seeds were used as a replacement for rice. This fine, delicate leaf micro is best not used with hot foods.
