Short ribs are an exceptionally flavourful cut from the lower portion of the Rib. They are excellent for marinating & grilling, or are slow-cooked (braised, smoked or roasted) until tender.
Bone-in short ribs can be used in recipes calling for boneless short ribs, and will provide additional gelatin and flavor to the braising liquid through the cut ends of the bones.
If they aren’t braised long enough, they can be super tough to eat; if they are cooked too long, the meat will just fall apart. The key is to cook them until they reach a point that is just before they would fall apart.
